Josh and I are masters at underestimation. For instance, we didn't quite expect how many peach slices you get out of 22 pounds of peaches.
We were up pretty late, but we ended up with 8 quarts and 2 pints of plain ol' peaches in syrup, and 7 pints of honey spiced peaches (honey syrup, cinnamon, clove and all spice added in)
Yay for "putting food by" while it is in season--not only easier on your wallet, easier on the earth as well. Quit demanding out of season produce and grocers, shippers, etc... will quit supplying it.
